Thanks! I owe much to the discovery that it is stupid easy to make bread from scratch if you make the dough ahead and keep it in the fridge for when you're ready to bake the next loaf. Admittedly, the pizza peel and baking stone I got for Christmas don't hurt at all, along with the trick of putting a pan of water in the oven to help with producing a nice crust.
