Cinnamon Rolls

I periodically think about making my own kanelbullar -- Swedish cinnamon rolls -- and generally hang up on Step 1: Make a batch of yeast dough. Yeast dough. Botheration. Especially since every time I think of it, all the viable yeast has been used up in the bread machine, and what's left is a year or two out of date. Dead yeasty-beasties. [Is sad.]

But thanks to some clever dick at The Kitchn, I have finally made some. The secret weapon? Pre-made Trader Joe's pizza dough. Roll it out thin (dang this is way more work than I remembered), butter it, fold it in quarters, roll it out again, butter it, fold it in quarters again, roll it out, butter it, sprinkle with sugar, cinnamon, and, if feeling fancy, raisins or ground nuts, roll up into a long roll, slice longitudinally, and place the slices in cupcake papers, brush with egg-white and sprinkle with pearl sugar, then bake. Easy peasy, and not at all bad, though next time I'll let the dough warm up longer and sit longer to rise. This first batch was a bit compact.

Those are super cute! I've tried to make those before with the TJ's dough, but I didn't incorporate butter, so they weren't nearly as tasty as yours must be... *g*

I make most of my doughs in my bread machine -- does yours have a dough setting? It's as easy as making bread machine bread then, and the dough will happily sit in the fridge overnight.

My kids adore cinnamon buns and I was not particularly impressed with the quality or price of IKEA's (normally IKEA is my go-to-shop for cheap Swedish food.) £2.10 for 6 frozen buns feels like a lot (and this family struggles with packets of six. Really it should be one each and two saved for next time but it's invariably one and a half each).

The issue is pearl sugar. I can get genuine Swedish stuff, but only from a company that charges £7 for shipping (!). I have bought something on eBay that I think will do, but I would have much preferred to buy from a seller who specifically mentioned that their product wouldn't melt. Oh well, experimentation is the spice of life or something.

Yes, I could make dough in the bread machine, and I may do it that way too, but the R2-unit (as we lovingly refer to my valetudinarian bread maker for obvious reasons (warning: YouTube video) is big and awkward and a pain to re-assemble after cleaning and so I don't use it as much as I might. Whereas I have to go to Trader Joe's quite regularly anyway to buy cat food and similar necessities anyway.
