For red velvet cake, the recipe we had called for an entire bottle (4 oz., maybe?) of red food coloring. Dunno if the professional stuff is any better than McCormick's, though.

Wilton also makes a non-taste red, IIRC. If you miss red-colored anything, it might be worth looking at.
