Well, goodness. Why didn't anyone tell me sooner about how easy and effective butterflying poultry is? Why yes, you can roast a whole chicken in 40 minutes and have it come out with the most amazing, super-crispy skin imaginable. But even better than that, finally, finally a way to get herbs and aromatics to really flavor the flesh of the bird instead of just sitting in the cavity getting mushy. Put the garlic and rosemary under the loosened skin of the bird, salt the skin liberally, and roast the butterflied bird skin-side up. Fantastic! The chicken actually tasted of garlic and rosemary.

And just by the bye, the internets are really coming into their own, lately. Not only did the President call on a correspondent from Huffington Post during a recent press conference, but last night's footage of the horrific plane crash in upstate New York was being credited to YouTube on CNBC. Yes, you heard it first on the innertubes.

Even more amusing than usual from the Bushies: former Press Secretary Ari Fleischer complained about Obama calling on the Huffington Post guy. Ari is the one who, for three years, approved the White House credentials for and called on Jeff Gannon (sic) of talonnews.com.

And the question asked was a good one, about the lack of respect shown our fallen soldiers by not showing their flag draped coffins. The conservative news media was easily manipulated by the cowardly chicken hawks, so let's see how much guts the news guys have. Last I heard, they were looking into it; not a good sign, but given the economic crises, it's one of the Bush disasters that is low priority.

Right now, I have leg quarters flavored with lemon, garlic and ginger (and a touch of oil) baking in the oven.

It is mostly how I cook already but it is emphatically not, as far as I can tell, how most people cook. Certainly my dear friend Kim is a devout By The Recipe girl, and for years could not cook even familiar dishes without hauling out the recipe and following it slavishly.

And while I was raised in a tradition of cooking without a net, a lot of my cooking is self taught, so I always appreciate a good resource for basic techniques I haven't already mastered.

What temp do you roast the butterflied bird? 40 minutes... I'm guessing 400.
